At Bayview Acres, we believe that good food takes time. For those who have followed our journey in Belliveau Cove, you know we previously raised Cornish Cross birds. While those are the industry standard for speed, our mission has shifted toward heritage preservation and superior flavor.

This year, we’ve officially moved away from the Cornish Cross to focus exclusively on Rustic Rangers. These birds represent a slower, more intentional way of farming that aligns with our regenerative values and our commitment to our Legacy Cuts brand.

Why the Switch to Rustic Rangers?

The difference is noticed at the first bite. Because Rustic Rangers grow at a more natural pace, they develop stronger muscles and a deeper, more "old-school" chicken flavor that you simply cannot find in a grocery store.

• Coastal Foragers: These birds spend their lives on our Clare Community pastures, breathing the salt air of St. Mary’s Bay and foraging for clover and insects.
• Textured & Succulent: Slower growth means the meat has a firmer, more traditional texture and holds moisture beautifully during roasting.
• Regenerative Impact: Their active nature makes them excellent partners in our rotational grazing system, helping us improve the health of our soil.

2026 Pre-Order Details

For the 2026 season, we are planning for a total of 300 birds across three summer flocks. While our flock sizes may evolve in future seasons, we are keeping this year’s production intimate to ensure the highest quality for our local community.

• Target Dressed Weight: 6 lbs (The perfect size for a family Sunday roast).
• 2026 Price: $6.00/lb.
• Availability:
  • Flock 1: Week of July 2, 2026.
  • Flock 2: Week of August 11, 2026.
  • Flock 3: Week of September 22, 2026.

A $5.00 deposit per bird is required to secure your reservation.

How to Reserve Your Birds

Our heritage poultry is available on a first-come, first-served basis. As we are currently deep in farm prep and Ozzie's Outpost is still under construction for a future launch, all orders must be placed digitally at this time.

You can reserve your birds for any of our three summer harvest dates through the following channels:

Once your request is received, we will reach out with deposit payment instructions to finalize your order.

Culinary Note for Heritage Meat

Since Rustic Rangers are more active than the Cornish Cross you may be used to, they benefit from "low and slow" cooking. We recommend roasting at a slightly lower temperature to allow the heritage fats to render perfectly, resulting in a golden, crispy skin and incredibly tender meat.
