🥗The Ultimate Summer Harvest Bowl: Heritage Chicken Shawarma
Now that summer has officially arrived here in Belliveau Cove, our kitchen routines are completely shifting. The heavy winter stews are put away, and our meals are suddenly revolving around two incredible things: the vibrant, fresh pickings from the garden and the arrival of our seasonal, pasture-raised chicken.
There is truly nothing like peak-summer eating on the coast. The long, sunny Nova Scotia days mean our gardens are overflowing with crisp cucumbers, juicy tomatoes, and leafy greens. At the same time, our first seasonal flock of Rustic Ranger chickens is out on pasture, enjoying a slow, active life moving across fresh grass with beautiful views of St. Mary's Bay.
To celebrate this beautiful convergence of land and sea, we are sharing one of our favorite warm-weather dinners: Pasture-Raised Chicken Shawarma Bowls.
This recipe is heavily inspired by a fantastic base dish from our friend Aysegul over at Foolproof Living, but we have given it a distinct Bayview Acres spin. We have optimized it to let our dense, richly flavored heritage poultry shine, packed it with fresh local summer veggies, and adapted the entire meal to be 100% gluten-free and dairy-free so everyone at the table can enjoy it.
The Heritage Difference: Why Slower is Better
If you are used to cooking standard supermarket chicken, you are likely accustomed to meat that is pale, injected with water weight, and largely flavorless. Because industrial broiler chickens are cross-bred to grow at an unnaturally rapid pace indoors, they never have time to develop authentic muscle structure.

Because pasture-raised poultry is texturally dense and lean, it thrives with a marinade. This shawarma recipe uses a beautiful blend of warming spices, olive oil, and fresh lemon juice to deeply tenderize the chicken, while a gentle bake ensures the meat stays incredibly juicy and sliceable.
The Summer Harvest Shawarma Bowl
- Prep time: 20 minutes (plus 1 hour to marinate)
- Cook time: 20 minutes
- Servings: 4 hearty bowls
For the Heritage Marinade:
- 1 ½ lbs Bayview Acres Legacy Cuts Rustic Ranger chicken (thighs or breasts)
- 1 ½ tsp coarse sea salt
- 2 tbsp shawarma seasoning (a blend of cumin, paprika, turmeric, coriander, and cinnamon)
- ¼ cup fresh lemon juice
- ¼ cup extra-virgin olive oil
- 3 cloves fresh garlic, minced
For the Seasoned Rice Base:
- 1 cup long-grain white rice or quinoa, thoroughly rinsed
- 2 cups flavorful chicken or vegetable stock
- 1 tbsp extra-virgin olive oil (our dairy-free swap for butter)
- 1 tsp sea salt
- ¼ tsp black pepper
For the Fresh Summer Toppings:
- 1 ½ cups sweet cherry tomatoes, quartered
- 1 crisp English or Persian cucumber, diced small
- 1 ½ cups curly salad greens or fresh spinach, thinly sliced
- ½ cup pickled red onions
- ½ cup sliced dill pickles
- 1 cup classic creamy hummus
- The Dairy-Free Tzatziki Sauce: 1 cup unsweetened coconut yogurt or almond yogurt mixed with ½ cup grated cucumber, 1 tbsp lemon juice, 1 minced garlic clove, and a pinch of salt.
- Lemon wedges and your favorite local hot sauce for serving
Step-by-Step Instructions
1. Marinate the Chicken
Pat your Rustic Ranger chicken completely dry with paper towels. Season generously with the sea salt, then place it in a glass bowl. Whisk together the shawarma seasoning, lemon juice, olive oil, and minced garlic. Pour the marinade over the chicken, tossing with tongs to ensure every piece is completely coated. Cover and let it marinate in the refrigerator for at least 1 hour (or overnight for maximum flavor penetration).
2. Bake to Juicy Perfection
Preheat your oven to 425°F (220°C). Arrange the marinated chicken in a single, even layer on a large baking sheet. Bake on the middle rack for 18–20 minutes until the internal temperature registers a safe 165°F (74°C). If you love a crisp, golden edge on your shawarma, pop it under the broiler for the last 2 minutes, watching it closely. Let the chicken rest for 5 minutes, then slice it into half-inch strips.
3. Simmer the Rice
While the chicken bakes, combine your rinsed rice, chicken stock, 1 tablespoon of olive oil, and salt in a medium saucepan. Bring the liquid to a rolling boil over medium-high heat, then immediately drop the heat to low, cover with a tight-fitting lid, and let it simmer for 15 minutes. Remove from the heat and let it steam with the lid on for 10 minutes before fluffing with a fork.
4. Assemble Your Summer Harvest Bowls
Now comes the fun part! Grab four deep bowls and divide the warm, seasoned rice evenly among them. Arrange a generous portion of the sliced, spiced Rustic Ranger chicken on top. Next, build your bowl by nesting small piles of your crisp, fresh garden ingredients: the sweet cherry tomatoes, diced cucumbers, and leafy greens. Add your tangy pickled onions and dill pickles for crunch.
Finish each bowl with a big, comforting dollop of creamy hummus and our dairy-free tzatziki sauce.
