Unlike commodity, factory-farmed eggs, our small-batch eggs come from chickens raised with true farm-to-consumer transparency. Because they grow slower and live naturally, their eggs are far more nutrient-dense. Ingredients
- 8–10 Bayview Acres farm-fresh eggs
- ¼ cup heavy cream (or whole milk)
- 1 cup shredded sharp cheddar or locally sourced Gouda
- 1 cup seasonal vegetables (chopped spinach, wild mushrooms, or diced onions work beautifully)
- 1 tbsp butter (for the pan)
- A pinch of sea salt and freshly cracked black pepper to taste
Step-by-Step Instructions
1. Whisk the Base
Preheat your oven to 400°F (200°C). In a large bowl, crack your eggs and whisk them vigorously with the cream, salt, and pepper until completely smooth and slightly frothy. Stir in half of your shredded cheese.
2. Sauté the Fillings
Melt the butter in a 10-inch cast-iron skillet over medium heat. Add your chopped vegetables and sauté until tender (about 3–5 minutes). Spread them evenly across the bottom of the skillet.
3. Pour and Set
Pour the egg mixture directly over the vegetables. Let it cook undisturbed on the stovetop for about 3–4 minutes. You want the edges to just start to set and pull away slightly from the sides of the pan.
4. Bake to Golden Perfection
Sprinkle the remaining cheese over the top of the eggs. Carefully transfer the entire cast-iron skillet into the preheated oven. Bake for 12–15 minutes, or until the center is just set and the top is beautifully puffed and golden brown. Slice into wedges and serve warm!

Trisha eats strictly gluten-free and dairy-free, and this recipe is incredibly easy to adapt without losing that rich, comforting texture.
- The Swaps: Replace the butter in the skillet with high-quality olive oil. Swap the heavy cream for an equal amount of full-fat canned coconut milk (it gives the eggs an incredibly rich texture without any coconut flavor).
- The Savory Depth: Omit the dairy cheese entirely. To get that classic, savory depth naturally, whisk 2 tablespoons of nutritional yeast right into the raw eggs before pouring them into the skillet.
Peter's Spicy Kick Version
If you like to fire things up like Peter does, you can easily elevate your individual slice or spice up the whole skillet for the spice-lovers in your home.
- The Additions: Finely dice a fresh jalapeño or serrano pepper and sauté it right along with your vegetables in Step 2.
- The Finish: Just before putting the skillet into the oven, swirl a tablespoon of your favorite local hot sauce or a heavy pinch of red pepper flakes into the top layer of the eggs. Serve your final slice with a generous spoonful of spicy homemade salsa.
